One of the world's most refined and mysterious beverages that has a long and beautiful history steeped in tradition, art, and passion. To simply say that it is a beverage made from fermenting rice does not do justice to the complicated steps that are carefully taken to bring this complex drink to the world. It all begins with polished rice and its synergistic partner kōji-kin, a mold that activates an enzyme which in turn allows the starch in rice to be transformed into fermentable sugars. From there numerous steps are taken to complete the fermentation - each of which determine the final
outcome and profile of the resulting sake.

Sake enjoys its reputation for being extremely food friendly. It can elevate food pairings owing to its “umami” essence in a way that wine simply cannot. It also deserves recognition for being free of sulfites, gluten, and tannin. Delightful when
sipped well chilled in a glass.
